Sattur, a quaint little town in Virudunagar, is famous for its kaara sev. The spicy snack is very common in the southern districts of Tamil Nadu not just at teatime but also as a side dish to the main meal. Kara means spicy hot� and Sevu means fried noodles like "crispy". These beautiful slender crisps made with chickpea flour, rice flour, cumin, asafoetida, chilli powder, garlic paste and salt are a perfect snack on a rainy day. Everything is done manually “ right from the drying of the rice/spices to the pounding of the rice flour/ spices and mixing of the dough for the karasev. Many variations are also available with a similar medley of ingredients with minor differences like crushed ginger or garlic and pepper powder.
